Butternut Curry Soup – Butternut squash is great at conveying flavors. This one has curry and garam masala – exotic, yet not too crazy. The rich nut-iness of the butternuts brings out the flavor and there are a few red Anaheims (Pueblo) to give it a beautiful color.

Green Chile Mac-n-Cheese - We don't know exactly why this dish just sings. Maybe it's the hand cut pasta (Joe-Vito-Bella, Pueblo) or the rich all-natural cheese (Rocking W, Olathe) or perhaps its those super-flavorful green chiles (Milberger Farm, Pueblo). But, whatever it is, this dish is incredible!

Stuffed Butternuts – A meal that's as beautiful to look at as it is to eat. We roast acorn or butternut squash (Pueblo) until it just yields. Then we stuff its lovely hollow with organic quinoa (Mosca) that's been tossed with sautéed onions (Olathe), garlic (Avondale) and anaheims (Pueblo). And the last touch: a sprinkle of roasted pine-nuts.

Cheese, Chicken, Pork and Tamales - Almost everything in our deli is handmade by our staff right here. But, Wayne and Lisa at the Tamale Connection (Antonito) are sooooo good at what they do, there's no reason for us to re-invent the wheel. Their tamales are mostly meat with just a bit of masa layered around either pork (w/green chile) or chicken (with red chile). No filler here! Or, in the case of the veggie tamales, the masa and cheese are intermingled perfectly. With varying spice levels, there's something that's right for just about everybody

The Pastrami – Continental Meats in Denver makes an all-natural pastrami. That means NO nitrates, NO nitrites, NO preservatives and LOTS of taste. Plus, it's not fatty. Classic Turkey Sandwich – Everyone knows how perfect rosemary is with roasted turkey. So when we slice up Continental meats (Denver) turkey for a sandwich we load it onto fresh-baked rosemary-olive oil bread from Salida Bread Co. Then we keep it simple with just a schmear of mayo along with some all natural lettuce and tomato. A gorgeous pairing.

Mother Hubbard Squash - Jarrahdale pumpkins make an excellent side dish. We slow roast them for an hour, then combine a little cinnamon, sugar and butter and you've got a beautiful squash side!
